Mark Bittman has been in the center of the world of food and cooking for the past 40 years. He was a long-time columnist for the New York Times before leaving the newspaper six years ago. Bittman has also written more than 30 books including How to Cook Everything. His latest book is Animal, Vegetable, Junk: From Sustainable to Suicidal and it’s a deep dive into the history of agriculture as far back as the Crusades. Our conversation is deep, too.
